The process is entirely physical, with no chemical interactions, ensuring the wine remains as natural as possible.
Cold Distillation Under Vacuum
Alcohol is gently removed using cold distillation under a vacuum of 33 bars of negative pressure. This allows the alcohol to evaporate at a low temperature (28–30°C), protecting the wine’s delicate aromatic profile.
Taste Balancing with Concentrated Must
After the alcohol is removed, rectified concentrated must is added to balance the flavors, maintaining the richness and complexity that wine lovers appreciate.
